Black Forest ham burgers with chicken and cherry BBQ sauce

(serves 4)

For the BBQ sauce, dice the onions and sauté in the rapeseed oil with the sugar until caramelised. Cut 8 slices of Black Forest Ham into strips.

Dice the garlic, add to the pan with the ham, and fry briefly. Deglaze with the kirsch and red wine vinegar. Add the passata, cherries, soy sauce, paprika powder and cayenne pepper and reduce for about 20 minutes. Blend the sauce to a puree.

Fry the remaining Black Forest ham on both sides until crisp. Slice the chicken breasts into strips, season with salt and pepper, and fry. Heat the buns if desired and make up the burgers with the meat, ham and sauce, lamb’s lettuce, a few slices of tomato and onion rings. Enjoy!
